warm up this winter with a traditional italian dish


If you are staying at our Italian Lake Garda villas this winter, keep the chilly weather at bay when you are snug in your luxury villa by cooking up some delicious Italian food. Italian cuisine is universally loved and you should definitely try making some seasonal dishes on your holidays. 
For winter-inspired dishes, it is best to go for something that resonates with the season, and northern Italy is a fantastic region for delicious seasonal food. Try making this farfalle with venison ragù; this perfect Italian dish which serves 4 and will keep you warm this winter. 
Ingredients
200g venison chopped to coarse mince
Olive oil for frying
100g each of carrot, celery and onion all chopped
Small handful of porcini mushrooms, soaked and finely chopped
100ml red wine
A few juniper berries
1 cinnamon stick
A splash of brandy
A small amount of meat stock
320g dried farfalle
Butter and grated parmesan to taste. 
Method
Brown the meat in the heated vegetable oil in a pan, add the chopped vegetables, mushrooms and the wine, then the juniper cinnamon and cloves. Add the brandy and just enough meat stock to almost cover the ingredients.
Keep the pan covered on a gentle heat until the meat is cooked through and the flavours combined, adding more stock if needed.
Cook the pasta in plenty of salted water until not quite done. Drain and sauté with the meat sauce. Add fresh butter and parmesan to taste. 
This is a simple dish that is easy to make, it is sure to keep you feeling full and warm on the wintery days in northern Italy.
